Airmail
I wanted a cocktail with some fizz for New Years Eve so raided the archives for something suitable. The Airmail was popularised by Esquire magazine in 1949 and the name comes from getting you from point A to point B, quickly. I didn’t have any honey in the house so added some cinnamon syrup I had made up for some other concoctions and it worked a treat. The rum I used was a Christmas gift of Twin Fin which has a caramel flavour that really worked well to contrast with the fizz. The sparkler gave it some New Year magic and the effect was complete.
Recipe
2 oz Spiced Rum
0.5 oz Lime Juice
0.5 oz Cinnamon Syrup
8 oz Champagne or Prosecco
